Parker Restaurant Group announces its rebrand to Parker Hospitality to reflect the growth of the brand’s company culture, values, and portfolio, which will introduce its latest restaurant concept, Nisos. Opening in spring 2022 at 802 West Randolph Street in Chicago’s West Loop neighborhood, Nisos will be the group’s first foray into modern-Mediterranean dining and will feature a menu influenced by the flavors and culture of the region. 

Brad Parker, founder and CEO of Parker Hospitality, traveled to Mykonos five years ago for a deep dive into the culture, history, and food. It was here he first experienced the cooking of our new chef partner Avgeria Stapaki while she was executive chef and partner at Principote Mykonos. Stapaki, a Greece-born chef, and Parker continued to build a relationship over the years leading to her ultimate move to Chicago to bring Nisos to life. Stapaki has cooked in kitchens throughout the Mediterranean area including Michelin-starred Hytra and spent time in Italy, Spain, and other bordering regions. Her food will reflect a blend of the areas and true representation of the fresh, seasonal cooking and locally sourced ingredients using a coastal pantry that will incorporate a variety of textures and elements of nature: land, sea, and air.

Nisos is a sundrenched, airy two-story space with a neutral, earth tone palette that will be carried throughout the restaurant. Its spacious 9,000 square-foot floor plan will accommodate 225 guests for indoor dining, bar seating, and plans for a rooftop garden oasis. The space will be designed by Olya Volkova, head of OV & Co.

Parker Hospitality’s rebrand and expansion signifies the beginning of a new era that will be focused on the growth of the group with new concepts kicking off with Nisos and the internal investment and development of its team members. Nisos will be the third concept under the new Parker Hospitality portfolio, which includes popular coastal cuisine concept, The Hampton Social and Chicago-based live music venue The Bassment. Parker Hospitality also has plans to expand The Hampton Social brand in 2022, with two new openings planned for Delray and Miami/Brickell, Florida. 

Parker Hospitality is a hospitality company based in Chicago that conceptualizes, develops, manages, and operates a portfolio of restaurants and lounges. In 2015, the group opened two venues in the River North neighborhood of Chicago: The Hampton Social, a coastally inspired restaurant, and The Bassment, a speakeasy-style live music lounge.
