This Lemon Garlic Shrimp recipe is based on one I've seen a million times on Pinterest and a few of my friends have made it.
After finding the recipe, I realized that the amount of butter was pretty intense.
The recipe says it serves 8, but 2 pounds of shrimp for 8 people is not very much.
That portion size is too small in my opinion.
Plus, the original recipes for this use at least 2 sticks of butter and that feels excessive for my sensitive stomach.
I'm not against all butter, so I kept butter in the recipe but used some broth to add liquid and extra flavor. You can use chicken or vegetable broth.
This recipe is incredibly easy to make.
It'll take about 30 minutes from the very start to the second you take your first bite of this heavenly shrimp with buttery-brothy-yumminess sopped up with a piece of bread.
Here's what you do...
Take the heads off the shrimp (but leave the shell & tail on). Put in a baking dish. Sprinkle with pieces of butter and add broth to the baking dish. Cover with a bunch of garlic, some red pepper flakes, and salt. Bake. Sprinkle with parsley and fresh lemon juice.
Enjoy and sop up all the buttery-juicy goodness with a piece of French bread. I also like to add sauteed green beans, carrot fries, rosemary & garlic carrots, or a side salad to get in some veggies.
Lemon Garlic Shrimp
Ingredients
- 2 pounds shrimp unpeeled
- 4 tablespoon unsalted butter cold
- ยฝ cup chicken broth
- 2 tablespoon minced garlic
- ยฝ teaspoon red pepper flakes
- ยฝ teaspoon salt
- ยผ cup fresh parsley chopped
- ยผ cup lemon juice about 1 whole lemon
Instructions
- Preheat oven to 375*F.
- Remove the heads from the shrimp and put the shrimp in a 13x9 baking dish in one layer.
- Cut butter into small pieces and sprinkle over shrimp. Add chicken broth to the baking dish. Sprinkle minced garlic, red pepper flakes, and salt over shrimp.
- Bake until shrimp is opaque and cooked through {they will be pink}, about 10-15 minutes.
- Sprinkle with parsley and lemon juice. Enjoy with good french bread.
