Make Breakfast Burritos in Bulk for Cheap, Tasty Mornings

The Simple Dollar blogger wanted fast, healthy, and cheap breakfasts that he doesn't have to shout for at a drive-thru speaker. His solution? Homemade breakfast burritos, made at home and frozen for later.

Over the weekend, Trent wrapped up eggs, black beans and salsa into tortilla shells, tightly wound them in plastic wrap, and calculated the total cost at about 75 cents each. And that's with everything bought brand-new—the salsa, wrap, and tortillas could certainly be knocked down to store brands, and breakfast burritos are almost infinitely customizable in fillings and seasonings.

Intrigued at the idea of starting your own breakfast take-out stand in your kitchen? Check out Trent's basic packing and wrapping instructions. For ingredient inspiration, start at the foundations, as Wikipedia understands them:

An entire American breakfast can be wrapped inside a 15-inch flour tortilla, accompanied by field-fresh, often very hot, green chile. Southwestern breakfast burritos may include scrambled eggs, potatoes, onions, chorizo, guisado, or bacon.[5] Tia Sophia's, a Mexican café in Santa Fe, New Mexico, claims to have invented the original breakfast burrito in 1975, filling a rolled tortilla with bacon and potatoes, served wet with chili and cheese.

Here are a few more ideas for wrapping your own insta-ready meals:

  • Vegetarian: Take a page (literally) from Mark Bittman's How to Cook Everything Vegetarian and try his breakfast burritos, along with nine sauce ideas.

  • Zesty Breakfast Burritos: A potent pork mixture that's easy to cook in big batches and freeze—or make for dinner and burrito-wrap the remains.

  • Well-stuffed: Ellie Krieger's Food Network recipe puts avocado, tomato, red peper, black beans, red onion, pepper Jack cheese, and, of course, eggs, into a fully-cooked burrito. Skip the sour cream if you're going to be freezing.

Okay, now the real fun: Tell us what goes into your dream burrito for a morning meal. Or tell us what would be quick, easy, and cheaper than fast food. Dish it all up in the comments.
