Move over French Green Bean Salad, we’ll get to you in a second.

Let’s talk for a minute about nuts.

Real, fresh, wholesome, clean nuts.

No junk added. No inflammatory oils, no inflammatory salts, no MSG. Sadly, most nuts you see in the store are filled with these unhealthy ingredients and you probably have no idea. Do me a favor and take a look at the ingredient list on the can or bag of nuts that are in your pantry. I bet most of them include refined oils, salts and/or MSG. Not fun. One of the biggest eye-openers for me was realizing how much junk is actually in store-bought nuts and seeds. I had no idea until I was a few years into my health journey. I slowly taught myself how to detox my food and my entire pantry to clean up my health and it worked! So, take those inflammatory nuts and seeds and replace them with cleaner options. How?

Well, that’s exactly what I’m going to show you today with my tasty French Green Bean Salad.

I hope you’re ready to toss out those nuts and seeds that are contributing to your inflammation (muscle pains, bloating, headaches, joint pain, food intolerances/allergies, seasonal allergies, etc). Then we’ll jump into this easy green bean salad.

This French Green Bean Salad is loaded with flavor bursting with oranges, cucumbers, roasted onions and more in a beautiful blue bowl.

Okay, so by now you should have tossed those nuts and seeds that aren’t serving you or your body into the trash.

It’s time to up your game and focus on clean nuts and seeds that don’t contain any inflammatory ingredients. I had no idea how hard it was to find real, clean nuts and seeds until I discovered Nuts.com. I used to travel to 5 different stores to find my favorite raw almonds, walnuts and cashews and then to another store for pecans and another for sunflower seeds and pumpkin seeds. There was no one-stop shop until I came across Nuts.com a few months ago. I immediately ordered a TON of nuts and seeds and was just expecting everything to taste similar to the nuts and seeds I bought here in NYC but they weren’t.

I was blown away.

And nothing really blows me away.

I was so amazed at the freshness of these nuts and seeds that I brought some down to my parents home on the shore and made them taste test and compare these nuts and seeds with the variety they had in their pantry. My mother was amazed. The amount of flavor and freshness was out of this world. It was like nothing I had ever tasted before.

And I know what you’re thinking….”Amie, they’re nuts. How different can they taste?” You have NO IDEA, folks.

I’m seriously ordering bags of their products every month and making all of my friends try them because the freshness and flavor is something that will make you realize how a nut and seed should really taste.

I kid you not.

You’ve gotta give ’em a try. Trust me on this. They won’t disappoint. And they have an amazing organic section that’s pretty mind blowing.

Now, let’s talk about this French Green Bean Salad and the fabulous walnuts in here that are inside from Nuts.com, of course.

This French Green Bean Salad is gorgeous and loaded with nutrients and fresh vegetables and fruits like cucumbers and oranges in a lovely blue bowl.

Roasted onions, steamed green beans, fresh oranges, ripe avocado, cucumber, parsley, fresh walnuts and a lovely maple orange tahini drizzle. What more can you ask for? Tomatoes, perhaps? Sure. You can add tomatoes and make this a Green Bean and Tomato Salad very easily. Just toss in some grape tomatoes and you’re all set.

This easy green bean salad is super easy to make and can be served for lunch or dinner anytime of the year but the flavor for fresh fruits and veggies right now is perfecto, so I suggest you make this sooner rather than later.

I’ve talked about my love affair with roasted onions for a few months now and I’m seriously still eating them weekly because they are so tender and naturally sweet and filling. Plus, they’re great pre-biotics, which feed the good bacteria (probiotics) in your gut- so it’s a win win.

You’ve got everything you need in this French Green Bean Salad: healthy fats (avocado oi, avocado, tahini and walnuts), fiber (green beans, cucumber, oranges) and protein (walnuts and tahini) so hop on over to Nuts.com and dive into their bag of organic walnuts along with any other nuts that you see that you may like and pick up a few of these fresh veggies at your local market this week. Then you’ll be on your way to eating a bowl of heaven.

Enjoy!

Ingredients

Instructions

  1. Preheat the oven to 400 degrees F. Prepare a large rimmed baking sheet with parchment paper. Place the onion quarters on the prepared baking sheet and drizzle with the oil. Use your hands to rub the oil on the onions to coat the onions entirely. Sprinkle the onions with sea salt and pepper and roast in the oven for 30-40 minutes or until they're tender and golden brown.
  2. Meanwhile, steam the green beans in a medium steamer basket in a medium sized pot over medium heat for 5-7 minutes or until the green beans are bright green and tender but not too soft. Remove from the heat; rinse them with cold water and set aside. Dry them with a paper towel if needed.
  3. In a large bowl, combine the roasted onions, steamed green beans, orange segments, avocado, scallion, walnuts, parsley and orange zest. Set aside.
  4. In a small bowl, whisk the tahini with the water, orange juice, maple syrup, ginger and garlic. Pour over the salad and toss to combine.
  5. Serve immediately.
