First things first, I feel like a total cheater writing this post because you guys know how much I luuurrrvvvveeee my coffee!

And yet here I am, declaring my unbridled love for this creamy, dreamy vanilla matcha latte.

As true as it is, I kinda feel a little guilty . . . but, just to be clear, as in love as I am with this luscious little, vanilla spiked matcha latte,  I have no intention of giving up my beloved coffee anytime soon.

Not now, not ever!

But, it’s nice to have a little something different every now and again.

Variety is the spice of life right?!

And you guys, this creamy, dreamy, vanilla matcha latte seriously is life!

For the longest time I was reluctant to even give matcha a try because;

1 – Coffee is my life blood.

2 – I’m not a huge fan of green tea – I find it a little bitter for my taste. I mean, I drink it, mostly for the health benefits (it’s rich in antioxidants, helps boost immunityrevs your metabolism, aids in digestion and numerous other things) but, it’s not my first choice.

When it comes to tea, I generally prefer the fruity kind.

So, knowing that matcha is pretty much green tea concentrate made me a little . . . nervous. I just assumed I wouldn’t like it

But, then my curiosity got the better of me so I decided to give it a try.

And you guys . . . I am officially hooked!

Matcha lattes are nothing like bitter, watery cups of green tea. At least not the way I make them.

This vanilla matcha latte is luscious and creamy, velvety smooth, deliciously nutty, subtly sweet and simply divine!

The earthiness of our matcha marries so perfectly with that hint of sweetness we get from the vanilla, the creaminess of the almond milk and the sweet, smooth, nutty, richness of the coconut oil.

It’s like a vibrant, delicious, nutrient rich hug in a mug.

Best enjoyed with a cheeky little sprinkling of finely shaved dark chocolate. You know, for extra antioxidants and all that 😉😉😉

Seriously you guys it’s soooooo good!

I can not stop!

Well that’s not true, I probably could if I wanted to but I really don’t.

Not even a little bit.

One taste and you’ll understand I just know it!

A few tips if your new to the world of matcha;

As I mentioned earlier, matcha powder is basically green tea that has been ground into a very fine powder. It’s extremely concentrated which means is a lot stronger (in both taste and nutritional value) than it’s regular leafy counterpart.

So I would suggest the first time you use it, you start with a little less (maybe 1/8-1/4 tsp, max) matcha powder – taste and adjust as you go along.

Also, you don’t need any fancy whisks or special equipment to make your own deliciously dreamy matcha latte. You can do it right there on the stove top in the comfort of your own kitchen. By all means if you have a bamboo whisk and milk heating/frothing machine on hand go ahead and use them but if you don’t have them please don’t feel like you need to run out and buy them especially for matcha latte making. They really aren’t necessary.

All you need to do is go get yourself some matcha. And I strongly encourage you to do that ASAP because you guys, did I mention the yum?!

I mean would you just look at it?! 😍😍😍

Creamy, Vanilla Matcha Latte
{Dairy Free & Paleo Friendly}

Makes 1 creamy, dreamy, velvety smooth, vanilla spiked matcha latte

Ingredients –

1 scoop (1/4-1/2 teaspoon) of Matcha Green Tea

1/2-1 teaspoon of vanilla or 4-6 drops of vanilla cream stevia – I like to use Sweet Leaf Stevia – more or less to taste

1 Tablespoon of coconut butter or oil (optional but recommended)

1/4 cup water

2/3 cup unsweetened vanilla almond milk (or milk of choice)

1-2 scoops of Vital proteins unflavored collagen peptides  or the collagen coconut creamer – optional

Optional but recommended for serving –

A couple of squares of dark chocolate – 1 grated for serving + a couple extra for you to enjoy along with your dreamy matcha latte

Method –

1 – Place all ingredients (except the chocolate) into small saucepan and whisk to combine.

2 – Place over medium heat and whisking frequently (so the milk doesn’t catch and burn), heat to preferred temperature.

3 – To serve, pour into your favorite mug and grate over a little dark chocolate if desired ← seriously, do it!
