Simple Baked Brie With Honey and Pistachios Recipe

The only thing better than brie? Melty baked brie, with added sweetness and crunch.

Nothing says let’s party like a baked brie. Add some seasonal fruit, nuts, honey, or jam and your guests might never leave.

Any small bloomy rind cheese, preferably a triple cream, will work here, it doesn’t have to be the most expensive wheel of cheese in the case.

This baked brie is simple, just score the rind and top it with pistachios and a little drizzled honey. And that's it. If your wheel came in a thin wooden container, you can bake it straight in that. (Don't forget to remove the paper wrapper, though!) We recommend that you set the container on some parchment paper on a baking tray, just in case. Some wheels will be packaged in a cardboard container, which we don't recommend putting in the oven. Instead, you can bake it directly on the parchment, or use a small oven-safe dish.

After baking, serve with crackers, baguette, or thinly sliced apple.

Simple Baked Brie With Honey and Pistachios Recipe

Serves 6 to 8 servings

Ingredients

  • 1 (6- to 8-ounce; 170 to 225g) round brie, camembert, or any soft-ripened cheese, slightly chilled (see notes)

  • 1/4 cup lightly salted pistachios (2 ounces; 60g), shelled and roughly chopped

  • 2 tablespoons (30ml) honey

Directions

  1. Preheat oven to 350°F (180°C). Using a sharp knife, score top rind of cheese in a crisscross pattern, spacing cuts about 1 inch apart.

  2. If cheese came in a wooden container, place it back in container (without any other packaging), then set on a parchment-lined rimmed baking sheet. If it came in cardboard or other wrapping, place cheese directly on parchment-lined baking sheet, without any packaging. Bake until top is soft and runny, about 25 minutes.

  3. Top with chopped pistachios and drizzle with honey. Let rest 5 minutes, then serve.

Notes

If possible, use a triple-cream bloomy rind cheese, which has a higher fat content than a double-cream cheese and melts better.
