Optimization of Processing Technology of Stir-Frying Swim Bladders with Talcum Powder

Abstract: Objective To optimize the best processing paramerter for stir-frying Swim Bladders with talcum powder, and provide the study ideas and methods for the processing and quality evaluation. Methods L9 ( 34 ) orthogonal test was carried out by multi-index comprehensive analysis in the study, the crushing rate and protein content were taken as indexes, the expansion rate and extract were taken as reference indexes, according to the actual conditions, 4 factors ( stir-frying time, particle size, temperature and the dosage of talcum powder ) were investigated, in order to optimize the processing paramerter for stir-frying Swim Bladders with talcum powder. Results The best technological paramerteres proportion of talcum powder ( 200 mesh ) to Swim Bladders was 2 :1 , the temperature was 190 ℃, and stir-frying time was 3 min. The verification test indicated that the technology was feasible and result was stable. Conclusion The objective and reliable index is used to evaluate the traditional processing of stir-frying Swim Bladders until swell and crisp with talcum powder, it can provide the reference for formulating the new quality standard of processed Swim Bladders.
