Have your cake and Funfetti cookies, too! This brilliant hack turns a box of cake mix into perfectly chewy birthday cookies. They're way easier and faster than baking and decorating a cake. And you can easily double the recipe or make it ahead of time!
If you'd like to work in advance, simply scoop cookie dough onto a parchment paper-lined baking sheet and place in freezer. Once the dough balls are frozen solid, transfer to a resealable plastic bag. No need to let the dough thaw before baking! Just transfer to a parchment paper-lined baking sheet (again!) and bake as normal. The cookies may just require a couple additional minutes in the oven.
Not into funfetti? Any flavor of cake mix will work!

Ingredients
- 1
box Funfetti cake mix
- 1 tsp.
baking powder
- 2
large eggs
- 1/2 c.
(1 stick) butter, softened
- 1 tsp.
pure vanilla extract
- 1/2 c.
rainbow sprinkles
Directions
- Step 1Preheat oven to 350° and line two baking sheets with parchment paper.
- Step 2In a large bowl, combine cake mix and baking powder. Add eggs, butter, and vanilla, then fold in sprinkles. Scoop out dough with a medium cookie scoop and place on a baking sheet, about 1" apart.
- Step 3Bake until slightly golden, 12 to 13 minutes. Let cool.
