Yay fellow vegan! :) And congratulations on starting your journey!
That is definitely enough exercise. And I’m assuming that by exercise you mean cardio–if it’s moderate intensity or above (as in you couldn’t hold a conversation during it, and get your heart rate above 150) then that might even be too much exercise, especially if you haven’t exercised much in the past. Just watch yourself to make sure you don’t get symptoms of overtraining, like fatigue, trouble focusing, and constant soreness.
And I can’t really say how many calories you should be eating because I don’t know your weight and height, but you can tell how big your deficit is by how much weight you’re losing. If you consistently lose more than 2lbs per week, I’d suggest upping your calories, as the most sustainable/healthy weight loss rate is generally less than 2lbs per week.
If you’re able to consistently lose 1-2lb a week, which seems like it should be easy given your plan, then it’ll take you about 15-30 weeks. This sounds like a long time, but making a slow, consistent lifestyle change will give you way better results than a crash diet, and you’ll feel so much better while doing it! You’ll keep more muscle and look way better at the end instead of skinny-fat :)
Best of luck to you!
