Omelette in a Cup
Need a hot breakfast, but don’t feel like heading to the cafeteria? Try this take on an omelette you can make right in your microwave.
2 eggs
1 tablespoon milk
Chopped ham
Shredded cheese
Chopped veggies as desired
Salt and pepper to tasteSpray a 16 ounce coffee up with non-stick cooking spray. Crack the eggs directly into the cup, add milk, and whisk with a fork until well mixed. Microwave for 1 minute. Remove carefully and add cheese, ham, and desired vegetables. Microwave an additional 30-60 seconds, or until egg is cooked through and cheese is melted. Season with salt and pepper. If you prefer, you can substitute cooked bacon or sausage crumbles for the ham.
