In a large bowl, combine the macaroni, celery, onion, parsley and tomato, if using. In a small bowl, whisk together the mayonnaise, mustard, sugar, vinegar, sour cream and salt. Pour the dressing over the salad and stir to combine. Season with salt and pepper to taste. Serve. Store covered in the refrigerator, for up to 3 days.

We made a double recipe (1 lb. macaroni in total) and did leave out the optional tomatoes. The base dressing may be good, but after refrigerating the dish overnight it's like the dressing coagulates as little bits on the pasta, visually unappealing and not creamy. Plus, despite soaking the red onion for more than 30 minutes, it was still the first flavor we got and definitely the lingering flavor, but of course this could just be we had a strong onion. After making and adding more dressing and a splash of cream we managed to get it back to looking creamy, and it was better than store bought mainly because the pasta was cooked correctly (not mushy), but as is this is not a go to recipe for us.

I made this recipe today. It was wonderful. I will never use another mac salad recipe. The dry mustard and the cider vinegar gave it a real zing!

Excellent! I agree that grocery store pasta salad just is not good. The dressing in this recipe is surely a "keeper!" Then, just add in all the wonderful colors of summer for a delightful treat. Thank you for sharing.

I never like the grocery store pasta salads because of the mayo but this recipe mixes mayo with sour cream and dry mustard and vinegar which gives it the perfect balance.

Fantastic dish. I eye-balled the dry mustard quantity and I think I overdid it, but that's on me! Easy to make, and super delicious anyways.
