My brother, Craig, introduced Caitlin to Baked Potato Pizza from Pete Zaaz in Brooklyn when she took a trip to the city and stayed with him. She declared it one of the best pizzas she’s ever had! When Mike and I took the boys last May to Brooklyn, Caitlin told us we had to try the baked potato pizza while we were there…so of course, we did.  It was delicious! And something we still keep craving and daydreaming about!

Being about 330 miles from Pete Zaaz, we decided we needed to try our hand at making our own so we could satisfy that potato pizza craving whenever the need arose.  Pete Zaaz is known for the purple potatoes they use on their baked potato pizza, but we couldn’t find any at our local stores. We used red potatoes and still thought this was delicious and definitely hits the spot when we can’t have the real thing!

Baked Potato Pizza

pizza dough for 1 pizza (homemade or store bought)
1 potato (we used red, Pete Zaaz’s uses purple)
1/4-1/2 cup heavy cream
1 cup shredded white cheddar
1/2 cup shredded mozzarella cheese
1/2 cup + crème fraîche
5 slices thick-cut bacon (use applewood smoked if you can find it, but any thick-cut will work)
1-2 tablespoons thinly sliced scallions
extra virgin olive oil
sea salt

Preheat oven and pizza stone to 450 degrees. (If you don’t have a pizza stone, use a large round baking sheet).
Scrub potato clean (you can peel if desired, we left the skin on) and thinly slice into rounds. Place your sliced potato into a small saucepan, and just cover the potato with heavy cream. Bring the cream to a simmer and let the potato cook until fork-tender, but not crumbly.
Cut bacon into small strips/pieces and cook until crispy.
Roll out pizza dough on lightly floured surface.
Spread 1/2 cup of crème fraîche over the dough. Top crème fraîche with cooked potato. Sprinkle the cheeses over the potato. Top cheese with cooked bacon pieces. Carefully transfer pizza to stone (a pizza peel will make this easier). Bake for 10-15 minutes or until crust is golden and the cheese is melted.
Remove pizza from oven and sprinkle pizza with scallions. Brush crust with olive oil and sprinkle with sea salt. Place a spoonful of crème fraîche in the center of the pizza and top with more scallions.
