Everyone loves brownies. Everyone loves waffles. But what if you could have a combination of the two? Chocolate brownie waffles are a great twist on plain waffles and quick to make (and eat, for that matter)! Typically yields 4 waffles, but this can depend on your waffle iron.

Ingredients

  • 25 mL (1 tbsp + 2 tsp) oil
  • 75 mL (1/3 cup) sugar
  • 3 semisweet chocolate squares (1 oz or 28 g each)
  • 2 eggs
  • 200 mL (2/3 cup + 1 tbsp + 1 tsp) sifted flour
  • 7 mL (1 tsp + 1/2 tsp) baking powder
  • 1/2 mL (1/8 tsp) salt
  • 175 mL (3/4 cup) milk
  • 1 mL (1/4 tsp) vanilla extract

Steps

  1. Clean it with a damp cloth if dirty. Lightly grease the grids with non-stick cooking spray. Plug in the iron and close the lid. Most waffle irons have a small light on the top to indicate the iron is ready to use.
  2. Melt your chocolate. Place the squares in a bowl and microwave at 15 second intervals until melted. Stir the chocolate in between to evenly distribute the heat.
  3. Use an electric mixer.
  4. Separate the eggs. Place the yolks in a bowl and the whites in a mixing bowl. Set the egg whites aside.
  5. Place this aside as well.
  6. Begin and end with dry ingredients - this means to add a third of the dry mixture to the chocolate and half the milk. After mixing, add the second third of the dry ingredients and the last half of the milk and mix. End off with the final third of the dry ingredients. Set aside.
  7. into the batter gently. Don't stir the mixture as this will cause the egg whites to lose their volume. The air cells in the whites will expand and make a light and crisp waffle.
  8. Evenly spread the batter with a rubber spatula.
