Nearly every spice mixture called for in recipes, even "Emeril's Essence," can be pretty easily assembled from the spices you already have in your cupboard. Old Bay, for instance, calls on bay leaves, celery salt, nutmeg, ginger, paprika, and a few other ingredients, and you can make just enough for your recipe from Cooking Cache's breakdown. Want tacos, but don't have a bag of the brown stuff around? Make-yourself taco seasoning calls on powdered chili, garlic, and onion, along with red pepper flakes, oregano, paprika, and cumin, according to Allrecipes.com's take.
