Catholic monasteries were historically major centers of brewing and learning, and their educational model eveolved into the modern university. Two Roads brewers and some beer-loving professors in Sacred Heart University’s biology department collaborated to brew this beer in celebration of that history. It is fermented with a yeast strain from a centuries-old monastic brewery currently operating in Belgium. This Abbey Single is brewed to be distinctive in flavor, yet approachable and refreshing.

This was poured into a chalice. The appearance was a transparent yellow color with a slim white level cap of a head that hung around for a good minute. A gentle clingy rim of white lacing sticks around in the wake of the head. The smell starts off with Belgian spices, light coriander, some citrus, and then some apples, pears and delicate sweet grass. The taste copies the aroma for the most part, balanced sweet and spicy. There’s a light spicy aftertaste running into a wet sweet to spicy finish. On the palate, this one sat about a light to medium on the body with a nice sessionability about it. Carbonation moves slyly over my tongue in a nice way. Overall, I’d say this was a nice Belgian pale ale that I could have again.

Appearance: Hazy yellow gold body beneath a thick head of creamy white froth. Excellent head retention, and very good lacing.
Aroma: Chalky yeast, apple, phenols (subtle spice, plastic), Pilsner malt, bread crumb, grass, lemon, some other citrus or tropical fruit.
Flavor: As the aroma suggests with an additional note of candy sugar, yet it remains dry with spiciness, mineral, and yeast. The less than clear fruity note from the aroma seems a bit like a pineapple and apricot blend. It's not particularly bitter (@ 25 IBUs) but the spiciness makes up for it and it finishes dry with some lingering herbs, mineral, and tea-like or leafy hops.
Mouthfeel: Light-medium in body and crisp with a lively, fine-bubbled carbonation.
Overall: The back label probably says it best: "This Abbey Single is brewed to be distinctive in flavor, yet approachable and refreshing." There are no flaws and it's almost perfectly balanced - a touch more sweet malt or candy sugar sweetness would be nice; and perhaps some more alcohol - yet there's somehow something lacking, that certain "je ne sais quoi".

T: follows the nose with a little orange added in; a bit of lemon tartness in the finish contrasting a touch of bitterness;
