• 2 cups Brown or green lentils

• 2 Carrots, peeled and chopped ( 3/4 cup)

• 2 Celery stalks, peeled and chopped ( 2/3 cup)

• 3 Garlic cloves, minced (1 tablespoon)

• 1 Onion, chopped ( 3/4 cup)

• 1/2 tsp Thyme, dried

• 1 Tomato, chopped ( 1/3 cup), small

Canned Goods

• 6 cups Chicken broth or vegetable broth

• 1 tbsp Tomato paste

Baking & Spices

• 1/4 tsp Black pepper, freshly ground

• 1 tbsp Salt, coarse

Oils & Vinegars

• 2 1/2 tbsp Olive oil, extra-virgin

• 2 tsp Red wine vinegar

Bread & Baked Goods

• 1 Garlic croutons

Liquids

• 4 cups Water
