Millersburg, Ohio – Lee Ann Miller knows how to bring a smile to anyone’s face with delicious food.

With September being a perfect time to pick apples, Lee Ann shared one of her favorite apple recipes with Fox 8’s Stefani Schaefer. Of course, Wayne and Kristi couldn’t resist and joined in at the end of the segment for a taste.

Apple Raisin Nut Muffins

4 cups tart apples, peeled and diced (I like Granny Smith)
1 cup white sugar
1-1/2 cups raisins
1-1/2 cups walnuts, chopped
2 eggs
1/2 cup vegetable oil
2 teaspoons vanilla extract
2 cups all-purpose flour
1-1/2 teaspoons baking soda
2 teaspoons ground cinnamon
1/8 teaspoon salt

In a medium bowl, combine all-purpose flour, baking soda, cinnamon and salt. Stir with wire whisk. Set aside. In a separate small bowl, beat together eggs, oil and vanilla. Set aside. In a large mixing bowl, combine apples, sugar, raisins and nuts. Combine well. Gently add liquid mixture to apple mixture. Lastly, carefully fold in dry mixture. Do not over-mix. Mixture will be thick and full of apples. Fill 18 greased muffin cups to the top. Bake at 375 degrees for 18-20 minutes. Serve with soft butter. Yield: 1-1/2 dozen muffins
