Korean fare goes upmarket to placate picky foodies

With Korea’s culinary scene growing more sophisticated by the hour, local restaurants are stepping up to meet the demands of picky foodies.

These days, instead of restaurants offering an unspecified diversity of dishes, the trend is toward more upmarket fare and restaurants that specialize in only one ingredient.

Last week, the JoongAng Ilbo set out to discover what makes these places so special.

Looking for tofu? Kongnamusup, or Bean Sprout Forest, is the place to go. The restaurant has about 30 dishes made with the bean-based alternative to meat.

Although owner Jang Mi-ran, 39, once disliked tofu, she decided to open a restaurant specializing in it after she became a proponent of healthy food.

“I wanted to open a place where people who dislike veggies would eventually fall in love with them,” Jang said.

The trendy restaurant offers an unlikely variety of foods paired with tofu.

For young people, Jang recommends the tofu fondue. The sauce is made with mozzarella and cheddar cheese, and for dipping there is sliced tofu instead of bread.

The restaurant’s best-selling specialty is the tofu heart roll. The dish consists of heart-shaped pieces of tofu stuffed with flying fish roe, sesame leaves and cucumber that are served with a fresh fruit dipping sauce.

The dessert menu features tofu ice cream made of soy milk.

Tofu fondue is available for 12,000 won ($10.74) for two or more people. The tofu heart roll costs 9,500 won, and a dish of tofu ice cream is 2,000 won.

Nakji, or small octopus, has long been a beloved food in Korea. Given its popularity, Pungeocheon owner Jeong Ok-nam decided to open a restaurant specializing in nakji.

He modeled his signature dish, ganjang nakji (nakji with soy sauce), after a similar dish made with crab.

Jeong says that the nakji dish requires a more delicate touch than the crab dish but that the taste is just as good. He says the best way to eat the dish is with a side of Korea’s staple - rice and seasoned seaweed.

Another of the restaurant’s specialty dishes is nakji jeongol, octopus stew. A live octopus is dropped into the dish at your table and the amount of chili powder that usually seasons the broth can be reduced to one’s taste.

A third item that is popular at the restaurant is nakji cho muchim, or vinegar-seasoned octopus. This, too, is seasoned with chili powder, but it can be replaced with vinegar, sugar and crushed garlic upon request at the time of order.

Ganjang nakji costs 20,000 won, nakji cho muchim costs 30,000 won, and nakji jeongol comes in sizes from small to large and ranges in price from 30,000 won to 55,000 won.

Labyrinthos

Labyrinthos was started by four ambitious young men in 2009 who wanted to make a dish so addictive that you cannot escape from a place once you taste it.

They focused on making grilled gopchang and their recipe builds upon the traditional version of the dish.

Gopchang is beef and pork intestines and is usually enjoyed with soju (Korean rice vodka).

Unlike other gopchang restaurants, Labyrinthos differentiates itself by using four unique sauces made of fruit, black beans, red pepper and curry. What’s more, the dish arrives fully cooked soon after the order is placed, which reduces the smell that seeps into clothing when it is grilled on the spot, as at other restaurants.

The four sauces and chewy texture of the grilled gopchang only add to the restaurant’s overall appeal.

The restaurant also offers a variety of seasonal dishes. Last summer, it served grilled gopchang pizza. And the restaurant is preparing a brand new gopchang menu for the spring, according to Lee Jong-seok, the restaurant’s catering director.

Grilled gopchang is 18,000 won, and grilled lamb costs 20,000 won.

Oyster gratin with cheese and bechamel sauce from Siori in southern Seoul

Siori specializes in oysters that are raised by hand in a mudflat on Korea’s west coast. The extra care devoted to the oysters creates a food that is rich in minerals with less smell.

Siori opened in 2003 as a Japanese fusion restaurant, but transformed itself into an oyster restaurant last year as the popularity of oysters grew. Today, Siori’s menu features Italian and Japanese fare.

Chef Lee Jin-su, 37, recommends that people who have never eaten oysters try the steamed oysters, a preparation that he says enhances the natural flavor of any food.

Other oyster dishes at the restaurant are more elaborate. There are fried spring rolls with oysters, prawns and asparagus and an oyster cheese gratin in bechamel sauce.

Steamed oysters costs 6,500 won, and the oyster cheese gratin in bechamel sauce costs 8,000 won.

The restaurant offers a set menu that costs 60,000 won for lunch (served from noon to 3 p.m.) and 77,000 won for dinner.

딱 한 가지 재료, 수십 가지 메뉴 … 그 레스토랑의 매력

지난해 말 미국의 레스토랑·호텔 컨설턴트 앤드루 프리먼이 ‘2011 레스토랑 트렌드’를 발표했다. 프리먼은 올 레스토랑 트렌드로 ‘컵케이크 대신 달콤하면서 짭짤한 파이’ ‘작은 접시의 사용’ ‘스칸디나비안 요리’ 등과 함께 ‘단일 재료 레스토랑(one-ingredient restaurant)’을 꼽았다. 특히 프리먼은 “최근 그릴 치즈 하나로 버거와 샌드위치, 핫도그 등을 만드는 레스토랑이 미식가 사이에서 인기”라며 ‘단일 재료 레스토랑’의 대세를 점쳤다. 세계적인 트렌드를 일찌감치 감지한 걸까. 한 가지 재료로 다양한 메뉴를 선보이는 음식점이 우리나라에도 꽤 있다. 메인 재료는 하나, 그러나 맛은 수십 가지. ‘단일 재료 레스토랑’에선 주인장의 번뜩이는 창의성과 노력으로 완성된 폭 넓은 맛의 변주를 경험할 수 있다.

콩나무숲 - 두부요리 풀코스

1 새콤달콤한 과일소스가 어우러진 두부하트롤은 다이어트에도 좋다. 2, 3 맛도 좋고 먹는 재미도 있는 두부퐁듀.

“원래 두부를 안 좋아했어요. 김치찌개·된장찌개도 두부를 다 골라내고서야 먹었죠. 음식점 창업을 준비하면서 문득 ‘나 같은 사람을 위한 두부 전문점을 해보면 어떨까’ 싶었어요.” 2006년 3월 콩나무숲을 연 장지란(39)씨의 모토는 ‘두부를 싫어하는 사람도 맛있게 먹는 두부요리를 만드는 것’이다.

 콩나무숲 메뉴판에는 이름부터 흥미로운 30여 가지 두부요리가 가득하다. 장씨는 “두부를 밋밋한 음식이라 여기는 젊은층 입맛에도 맞게 응용해 봤어요”라며 가장 먼저 ‘두부퐁듀’를 추천한다. 호박 퓨레에 슬라이스 치즈와 모차렐라 치즈, 한 입 크기로 썬 두부를 넣고 약한 불에서 살짝 끓여낸다. 여기에 직접 만든 콩 포카치아와 네 가지 제철 과일을 찍어 먹는다. 으깬 두부에 날치알·깻잎·오이를 넣고 하트 모양으로 빚은 뒤 콩 페이퍼로 감싼 ‘두부하트롤’도 인기다. 씹을 때마다 두부 속에서 톡톡 터지는 날치알이 간간하고 고소하다. 디저트로 우유 대신 두유와 으깬 두부를 넣어 만든 ‘두부아이스크림’까지 먹으면 완벽한 두부요리 풀코스다. 밸런타인 데이에는 두부퐁듀와 두부하트롤·샐러드·와인 두 잔으로 구성된 커플세트를 판매한다.

풍어촌 - 전매특허 간장낙지

강원도 산골마을 출신인 정옥남(53)씨는 2008년 2월 산낙지 전문점을 열었다. 한데 낙지에 대해 모르는 게 너무 많았다. “하루는 낙지 몇 마리가 수족관 안에 똑바로 서 있더라고요. ‘쟤네들이 쇼를 다하네’ 했는데 알고 보니 죽은 거였어요.” 그래서 싱싱할 때 저장해 놓고 먹을 방법을 찾다가 ‘간장낙지’를 개발했다. 끓는 물에 살짝 데친 낙지에 달여서 식힌 간장을 붓고 며칠 상온에 놓았다 냉동 보관한다. 정씨에 따르면 만드는 법은 간장게장과 별반 다르지 않지만 맛 내기는 더 어렵다고 한다. “게와 달리 낙지는 껍데기가 없어 다루기가 훨씬 까다로워요. 간장이 낙지에 금세 스며들어 오래 두면 너무 짜고, 싱겁게 담그면 숙성이 잘 안 되거든요.” 정씨가 일러주는 대로 살짝 구운 파래김에 밥 한 숟가락을 올리고 간장낙지를 얹어 싸먹어 보았다. 간장낙지의 쫄깃쫄깃하면서도 짭짤한 맛에 눈 깜짝 할 새 밥 한 공기를 해치웠다. 낙지전골을 주문하면 싱싱한 산낙지를 손님상에서 직접 넣어준다. 낙지초무침은 미리 부탁하면 고춧가루는 빼고 식초·설탕·다진 마늘만 넣어 새콤달콤하게 무쳐준다.

라비린토스 - 계절마다 바뀌는 이색 곱창요리

그리스 신화에 나오는 크레타 섬의 미로를 뜻하는 가게 이름. 밝고 아기자기한 프로방스 풍의 인테리어. 이 집이 맞나 싶어 두리번거리니 젊은 총각들이 반갑게 맞는다. “저희 곱창집 맞아요.” 2009년 7월 30대 총각 4총사는 의기투합해 크레타 섬의 라비린토스처럼 한번 들어오면 빠져나갈 수 없는 곱창구이 전문점을 열었다. 일반 곱창구이에 싫증난 그들은 네 가지 특제 소스를 만들었다. 여러 가지 과일이 들어간 기본소스는 달콤하고, 간장에 검은 콩을 재워 만든 블랙소스는 짭짤하면서 고소하며, 레드소스와 카레소스는 매콤하다. 천일염을 넣고 바락바락 주물러 씻은 국내산 한우 곱창에 주문한 맛의 소스와 큼지막하게 썬 파인애플·각종 채소를 넣고 볶는다. 주문 즉시 주방에서 볶아서 테이블로 내오기 때문에 옷에 냄새가 덜 밴다. 껍질을 두 번 벗기고 특제 소스에 볶은 곱창은 누린 맛이 없고 쫄깃쫄깃하다.

 계절마다 특선 메뉴도 선보인다. 지난 1월까지 밥으로 만든 도우 위에 곱창·대창·양·토마토소스를 올리고 구운 ‘곱창조각피자’를 팔았다. 그 맛을 못 봐서 아쉽다고 하자, 홀 서빙을 담당하는 이종석(33)씨는 “올봄, 그에 못지않은 신개념 곱창요리가 나오니 기대하세요”라고 자신만만하게 말했다.

시오리 - 365일 신선한 갯벌 굴


1 생 갯벌 굴엔 상긋한 바다내음이 가득하다. 2 베사멜소스와 치즈를 듬뿍 올리고 구운 굴 그라탕.

시오리는 1년 내내 싱싱한 갯벌 굴을 내놓는다. 갯벌 굴은 서해안 갯벌에 수평으로 그물을 설치하고 그 안에서 키운 것이다. 썰물 때는 햇볕을 받고 밀물 때는 미네랄을 흡수해 바닷속에서 키우는 기존의 수하식(垂下式) 양식 굴보다 비린 맛이 덜하고 육질이 더 탱탱하다.

 2003년에 문을 연 시오리는 본래 퓨전 일식집이었다. 그러나 지난해 초 갯벌 굴 전문점으로 탈바꿈했다. 갯벌 굴이 유독 인기였기 때문이다. 이진수(37) 조리장은 “우리 집 굴 요리는 그라탕·카르파쵸·튀김·간장 조림 등 주로 이탈리아식과 일본식”이라며 “갯벌 굴 본연의 맛을 느끼고 싶다면 제일 먼저 찜을 드시라”고 추천한다. 무슨 재료든 그 맛을 있는 그대로 살리는 요리법은 찜이란다. 응용력이 돋보이는 굴 요리도 풍성하다. 다진 갯벌 굴과 새우를 아스파라거스 위에 놓은 다음 라이스페이퍼로 말아 튀기고, 굴 위에 버터·우유·밀가루로 만든 베샤멜소스와 치즈를 올려 굽는다. 바다의 시원함과 육지의 구수함이 어울린 맛이 난다. ‘오솔레 오이스터 정식’을 주문하면 굴 요리를 코스로 즐길 수 있다. 정오부터 오후 3시까지 할인된 가격에 제공된다.
