Yogurt Toast: It's a Thing, and You Should Get In On It

Forget the butter. Forget the bowl. What you really want to be eating is yogurt—on your toast.

I love yogurt. I love toast! But if there's one thing I don't love, it's having to choose between the two (I know; life can be terribly rough at times). Enter: yogurt toast.

This idea was borne out of a week of eating just yogurt or just toast for breakfast, then feeling so hungry by our 10:30 a.m. staff meeting I was slumped down in my chair and seriously considering swallowing an entire pack of gum just to silence my rumbling stomach. One morning a few weeks ago, I reached for the fresh butter I keep in my fridge only to remember with horror that I had used it all up on a pasta sauce the night before. Drats.

Still, my coffee had brewed. My seeded wheat bread had toasted, and it needed a topper. Slightly skeptical about whether or not it'd work, I opened a jar of thick, plain Noosa yogurt and slathered it on. I added some flaky sea salt for good measure, as well as a tiny drizzle of extra virgin olive oil. Not only was the resulting product delicious, it felt hefty without being heavy. 10:30 came and went, and my belly stayed quiet. I was full! I was satisfied until lunch, but I didn't feel weighted down.

It's the combination of complex carbs (from the whole-grain bread), the protein, and the fat (from the yogurt; I always use full-fat) that worked nutritional wonders. But it was the blank canvas the yogurt toast provided that really got me excited. Since then, I've been making it almost every morning and topping it with both savory and sweet add-ons. Anything goes when it comes to this admittedly-already-kinda-weird meal, but the important thing to remember is to use good quality bread and a hearty yogurt without artificial sweeteners.
