Make Extra Extra Crispy Fried Chicken with the Double Frying Method

There are some of us who are content eating regular fried chicken, and the rest of us who want the crispiest, crunchiest, crackliest fried chicken possible. This quick cooking tip is for the latter group.

The We Are Not Martha blog reveals that the "secret" to crispier fried chicken is to fry the chicken not just once, but twice. The other steps to making this extra crispy fried chicken are similar to regular recipes: Brine the chicken, batter it up, then put it in hot oil. After that step, though, you increase the oil to 350° F for 2-3 minutes more until it's even crispier. It looks so good, doesn't it? Check out the full recipe in the link below.

Double-frying, by the way, is also the secret behind Korean fried chicken. And to take your fried chicken up another notch, try this milk batter coating trick from Serious Eats.
